Yogurt Marinated Chicken Kebabs (p. 102)

Memorial Day is basically worthless without a cookout, so yesterday we made chicken kebabs which had very minimal prep work but were a nice alternative to just doing burgers.

The marinade for this recipe is super easy to make -- crush garlic and salt together, then add black pepper, red pepper (I used more harissa instead), and cumin. Grate onion into the bowl and then finish off with olive oil and plain yogurt. Mix these ingredients together well, and then add chicken meat cut into bite-size pieces.

Let this marinate in your fridge for at least a few hours before threading the chicken onto skewers and grilling (or broiling) the meat.

These were delicious. We dipped the chicken in more yogurt mixed with harissa, and it was delicious. I would definitely make this recipe again.

We ate these with the roasted winter vegetable dish I made yesterday as well as this beautiful Sullivan Street bread.

chicken breasts -- $2.70 (thank you, Food Lion, for providing me with cheap meat)
onion -- $1.98
Total Cost of Yogurt Marinated Chicken Kebabs: $4.68
